For years now I've said, "If I attempt to bake, the house smells like sorrow and defeat".
I was never wrong in this statement. It's just something I wasn't great at. Birthday cakes for our son have always been made by the husband or store bought, and the husband has to rely on the kindness of others to get a birthday cake. The house never smelled like cookies, unless of course I had a cookie scented candle and I just learned to get used to knowing that I couldn't bake.
Betty Crocker knew my weakness though...Cinnamon Toast Crunch. Cookies, cake, frosting (amazing on graham crackers), and coffee cake. I had to try it. So I bought it and it's been hiding out in the pantry because I was still pretty sure I would screw it up. I really wanted that cake though.
So I did some searching on the interwebs for how to make it better and I found...add an egg, replace water with milk and replace the oil with butter and double it. I have some whole milk, which I usually don't have, for one of the recipes. So I set out to work.
It did not disappoint! It's so good, even the kid that doesn't like anything liked it. Now of course the true test will be when the husband tries it. But I feel like I accomplished something tonight. Even if it is a boxed cake mix.
Never be afraid to try new things or the things you've failed at before. You never know what you might discover, and some of the greatest things come from the greatest failures!
