Pan Fried Pork Chops / Breakfast Potatoes...

Note: This was typed as I was preparing dinner so you can see how things went as they went, lol.

Tonight we're going to have Pan Fried Pork Chops and Breakfast Potatoes. Now, I don't think I've ever met a potato dish that I didn't like. So I'm not too worried about how those are going to turn out. Potatoes just come out in various levels of greatness.

The pork chops, I'm a little worried about because problems started out before I even got started. The recipe calls for 12, thin sliced, pork chops that she also has listed as breakfast chops. This is something that I couldn't find anywhere. I was going to see if the butcher could cut them specifically but then I saw in the recipe that she says any pork chops will do. So I got the butterfly chops that I always get. These are a little thicker so I went ahead and got three. Ultimately that's going to give us six decent sized chops. Everything seemed to be fine but then when I put together the flour mixture...I had sooo much left over when I was done. If that's any indication, then I may have too much oil in the skillet. I'm honestly not sure if that's a thing but I just know that while they are cooking, they aren't looking crispy and delicious like hers do. Of course this could also just mean that I'm not nearly as good at this as she is but...I'm all was have to make the meals so here I am killing it. 

I came up with a plan for the pork chops. Once I poured the grease off of the pan, I notice that I had some crispy breading on the bottom. So I cleaned that off and I put those pork chops back in the skillet that only has some oil residue on them. Hopefully that will help them crisp up. I don't want a mushy breading. So far it's looking like that did the trick. When I flipped them, they already looked much better.

Good news is, that made all the difference. Also, the old man that watches all the Food Network shows confirmed that yes, there was too much oil. So apparently if you do not have these "breakfast chops", you need to adjust. 

It was tasty in the end though and everything was simple and delicious so I can recommend!

I've been woking on putting the video's on YouTube. While the process is simple, either I'm not smart enough for the task or I just don't really know what I'm doing. I'm running into some bumps but it's getting there.
