Chicken Marsala over Mashed Potatoes...
The Chicken Marsala recipe was fantastic! I served it over my own mashed potatoes that I usually make. It was easier than I ever thought it would be and the old man said it was, "pretty damn comparable," to the chicken marsala that he had just had at the fancy Italian Restaurant that we were just at. So I'm going to call that a win!
Meatloaf & Sweet Potato Fries...
I made Sweet Potato Fries to have on the side of my meatloaf. The fries were easy but I would have preferred them to be crunchier. These had the consistency of cooked carrots. The book did say that you could add cornstarch to make them crispy. I recommend trying that.
The sweet potatoes called for a stick of butter and 2 garlic cloves. I was surprised to find out that I was out of butter. I did have garlic butter, so I eliminated the garlic and tried this. How they might have been different, I don't know, but they were good!
I made my meatloaf along with them. No matter which meatloaf recipes we try, we always come back to this one. There's no fillers such as bread, breadcrumbs, or eggs. It's 1 lb ground beef, a pack of onion soup mix and a 5 oz can of evaporated milk.
This was an extremely easy meal as the meatloaf always is. I like making meatloaf for an easy meal. Kind of like a set it and forget it, lol.
