Tonight we had Chicken with Creamy Mustard Sauce and Stovetop Mashed Potatoes. This one was really good. There was a touch and go moment where I had to half the chicken breast lengthwise, but I left with all fingers in tact so I'm calling that a win. Didn't put the garlic in at the right time but that was rectified and you couldn't tell I had to back track a bit. Again, this is why I like cooking over baking. These are the mistakes I tend to make and in baking, those are unforgivable mistakes. With cooking, most things can be worked around, forgiven, changed out. I just prefer it.
The potatoes were delicious but a little runny for my taste. I don't think this was the fault of the recipe, I think it was because I tried to eyeball 3 lb of potatoes from a 5 lb bag an I'm pretty sure I failed that task. So I wound up with more ingredients than potatoes. The old man added cheese to firm his up a bit. So again, we can always find work arounds.
This could be a good one for a busy weeknight. It was simple, nothing too complicated. Especially if you're on the ball enough to have all your ingredients prepared and ready to go. Give this one a shot!
