Pork Chops with Wine & Roasted Garlic / Side of Roasted Potatoes...

Tonight we're having Pork Chops with Wine and Roasted Garlic and I'm making a side of Roasted Potatoes. The potatoes are not a Pioneer Woman recipe. It's actually one of the recipes from EveryPlate. Every one of the potato recipes's from them was delicious and simple. This one is just a smaller bag of gold potatoes that have been cut into fours, put those on a baking pan with a drizzle of oil, salt and pepper. Work that all around and place in the oven on the top rack for 25 minutes at 425 degrees.

This has been a pretty simple meal to make, it just takes some time because you need to roast the garlic in the oven for an hour. That's something that can be done however far in advance though.

This one was really good. My sauce reduced down a bit too much, my pork chops were pretty thick. That's wasn't a bad thing though. This is not terrible for a week night dinner. I recommend roasting the garlic before hand in that case. It wasn't the worst for a week night dinner though either.
