Tonight was Chicken Enchiladas. I need to start with...I don't like enchiladas. They just involve a lot of things I'm not a fan of, cheese, sauce on my food, I just don't see a lot of positives. That being said, for something I don't like, they were pretty good.
I will say this, I would not recommend this as a weeknight meal. It's easy but involved. None of the steps are complicated by any means, there's just a lot of them and kind of all at once. So it also wouldn't hurt if you had somebody to be an extra set of hands. Just so you can accomplish more than one thing at a time.
It calls for 16 tortilla shells that you toast individually and 3 chicken breast unless they are large. My chicken breast was large so I once used two and really, one could have been more of a half. I still wound up with enough extra pieces and parts to make two tacos for the old man while he waited for dinner. Fun fact...that gave the opportunity to find another good use for the cheese sauce from when I made the broccoli. That has proven to be amazingly versatile. Good on chips, good on tacos. There's a good chance that will be something that I'll just make to keep in the fridge for whenever the mood hits.
The old man gave everything a thumbs up and said that even the snack size starter was good....especially with the cheese sauce!
