Tonight was Skillet Lasagna. This has so far been the easiest and quickest. Nothing has been hard to make by any means, it was very simple though. Its good for a weeknight meal.
The recipe called for fresh mozzarella, for simplicity and cost I used good old bagged shredded mozzarella, I can't imagine this made a big difference. I also added an onion. For the marinara sauce I used "Cleveland's Own Little Italy" pasta sauce. Any marinara will do. This is one that I have been wanting to try and was always afraid to try it with one of the usual things I make .

Somehow I managed to forget the mozzarella cheese and the onion for this picture. They're in there though.
