Last night I made a little surprise bonus entry and I embarked on the dessert section. I made Quick & Easy Fudge. Quick and easy was an understatement! It was two ingredients melted together and some time in the fridge. As far as fudge goes...I thought it turned out well but for me too bitter. I'm not a fan of dark chocolate and think I'm going to try this again but with peanut butter or butterscotch chips. The old man is a dark chocolate fan and he also thought it was too bitter but a coworker thought it was great. So I think it's just a matter of taste. It's worth a shot though!
Sadly, I couldn't find a link online for this recipe but it's super simple. 3 cups of semisweet morsels, 1 14 oz can of sweetened condensed milk, melt that all together over medium heat and pour into an 8 x 8 baking dish that has been lined with foil and then sprayed with cooking spray. Cover with foil or plastic wrap and put in the fridge for 2 hours.
That brings us to tonight. Tonight was Lazy Chili Rellenos. Problems started with this in the fact that I don't have a gas stove. So I attempted to char the poblano peppers under the broiler. Negative experiences with the broiler caused me to be a bit too cautious which made the peppers contain too much moisture. This resulted in very runny eggs. The flavor was good but as we speak, I have the entire casserole under the broiler to try and finish it off.
The broiler was the last ditch effort to make this work. It still didn't work. Personally, I thought the flavor was good so I think there could be potential, the old man completely disagrees. He couldn't get past the fact that it was called chili rellenos and there were eggs involved. On top of that....it was runny eggs involved.
So, I think if you can start out with properly charred peppers, and don't commit to it being called chili rellenos. You might accomplish something. For me an mine though....this one's going to go in the trash and peanut butter and jelly sounds pretty good.
