Tonight was Beef Stroganoff over Buttered Parsley Noodles. Sadly, I couldn't find a link for the noodles but if you find me on TikTok, you can see how they're made. You can find me @neisesnightlies.
This was very good. A lot of steps, a lot of pans and skillets, but easy. There is brandy in this recipe, after eating it, I think red wine or even possibly a mixture of the two could be good.
As usual, a mishap was made. For some reason I really believed that I was going to be cooking 12 oz of dry pasta in the smallest amount of butter. I was not. Of course you have to cook the pasta and then add it to this buttery, garlic, lemon zest mixture that's in your skillet. So, I turned the heat off on my skillet, made my noodles, and when they were almost done, turned the heat back on for my skillet. I added a little more butter just to be safe. There was no reason to be the wiser.
These frequent mishaps occur because prior to this experience, I never looked at any of these recipes before. For that matter, I still don't really look at them until the day of. Maybe the night before if I really feel like I have my stuff together.
A few things I did that either weren't indicated or I just chose to do; When cutting the steak, I cut away the lions share of the fat. I then added those fat chunks to the oil when my pan was getting hot. Once that fat was rendered, I pulled the fat out and then put the actual meat I was using in the skillet. The recipe called for putting the meat in the skillet only half at a time. For the life of me, I don't understand why. You need a big enough skillet for everything that there is more than enough room for the 1 lb of meat it calls for. Also, when cooking the noodles, I put a little bit of beef bouillon in the water. It just adds a little bit of flavor to the noodles so you aren't adding something bland to something otherwise very flavorful. Whether using bouillon cubes is fine, I'm a fan of Better Than Bouillon. It's extremely condensed and a little bit is sufficient. So a jar can last for a very long time.
So if you don't mind the extra steps and multitasking while cooking, I do recommend this one, just make sure you look at both recipes before hand so you can create a game plan of when to start each step.
